Grilled Potato Skins

  • 4 medium-sized potatoes
  • 1/2 Cup any cheese, shredded
  • 4 Piece bacon, chopped
  • 1/4 Cup feta cheese, crumbled


  1. Heat a grill pan over medium-high heat and spray pan with non-stick cooking spray. Slices peaches and grill for 2-3 minutes on each side.
  2. Assemble by layering peaches with sliced fresh mozzarella and basil leaves. Drizzle with olive oil if desired.
