Lamb Souvlaki Sliders with Whipped Honey Peppercorn Feta

  • 1 lb. ground lamb
  • 4 cloves garlic, minced
  • 2 tablespoons grated lemon zest
  • 1 tsp. dried oregano
  • 1/2 tsp. kosher salt


  • 8 slider buns
  • 2 ounces whipped-style cream cheese
  • 1 1/2 tbsp. honey


  1. To make the burger patties, gently combine ground lamb, minced garlic, lemon zest, oregano, and salt. Divide into 8 portions, and form each into a disk.
  2. To make the feta, combine peppercorn feta, cream cheese, and honey in a food processor. Process for 3-4 minutes, scraping down the sides once per minute, until mixture is light and fluffy.
  3. Heat a grill to medium heat. Toss grape tomatoes and red onion cubes with olive oil, then season lightly with salt and pepper. Skewer tomatoes and onions. Grill vegetables, turning frequently, until tender and lightly charred, 2-3 minutes. Remove from the skewers. Grill lamb burgers, turning once, until just cooked through, about 2 minutes per side. Lightly toast the slider buns, cut side down, around the edge of the grill.
  4. Assemble sliders by stacking lamb, grilled tomatoes and onions, and a heaping tablespoon of whipped feta on each toasted slider bun. Serve warm.
